Roast Pork Loin with Apricot Jam
Ingredients
- 1.5 kg middle loin
- 1 piece sour apple
- 6 pieces shallots
- bacon 400 grams
- 2 tbsp apricot jam
- 2 tbsp Apple vinegar
- 2 tbsp Oil
- salt to taste
Instructions
Wash the pork loin, dry it, and remove excess fat and membranes that are on the surface of the meat.
Cut into thin (0.5 cm) thick slices, but do not cut them to the end.
In a bowl, mix Pork with oil, vinegar and apricot jam.
Rub the meat thoroughly with the resulting marinade, also in the cuts.
Insert a slice of apple and a slice of onion into the cuts.
Put the slices of pork fat on the meat and place it in the oven preheated to 200 degrees for at least 45 minutes.
After this time, check if the meat is already cooked.
If it is still undercooked, increase the time by another 5 to 10 minutes.
