Wafers with biscuits are an indispensable part of the range of small cakes because they are decorative, tasty and easy to make. I don’t know where I got the recipe from, I’ve had it written down on a piece of paper for a very long time and I pull it out like an ace up my sleeve when I run out of inspiration for Lent celebrations or for guests announced the day before.
In addition to fasting, you can also prepare them for people allergic to eggs and/or dairy products, and with small changes in the ingredients, they can also be fatty. Well, please try it if you haven’t already.
Wafers with Biscuits
Ingredients
- 2 wafer sheets (large)
- 350-400 g of square lean biscuit
- 4-5 spoons of apricot jam or other to taste
- For the filling:
- 250 g of sugar
- 2 dl of water
- 250 g of margarine
- 150 g of ground walnuts
- 150 g of ground biscuit
- 1 spoon of cocoa
Instructions
Phil:
Pour water and sugar into a saucepan and heat until it boils and the sugar dissolves
Add the margarine cubes and stir until they melt, then remove the pan from the heat
Mix in the ground walnuts, ground biscuits and cocoa, then leave the filling to cool
Filling procedure:
Spread jam on the rough side of one wafer
Spread the biscuit on that layer
Apply all the filling and flatten
Arrange another row of biscuits on top
Spread the second wafer with jam as well, then place it on the biscuit with the greased side facing down
Load the complex wafer and leave it in the fridge overnight
Cut into bars of the desired size and serve
Notes
If you are not fasting and/or you are not allergic to eggs or lactose, you do not need to use a fasting biscuit, while you can replace margarine with butter and water with milk.
