Spring is the time of awakening nature and senses, but also the time when we often feel tired and listless. The market and gardens are green, and vitamins and minerals in the body are deficient – ideal conditions for all kinds of salads.
This time I suggest you this spring salad of scallions and radishes, which, quickly prepared and served with a barbecue or other roast, represents a complete, nutritious and refreshing spring atmosphere.

Spring Salad
Ingredients
- 2 bunches of radishes
- 1 bunch of spring onions
- 3 eggs
- For the topping:
- 150g of Greek yogurt or sour sheep's milk
- 3 spoons of mayonnaise
- 1-2 cloves of garlic
- 1 tablespoon of apple or wine vinegar
- Salt and pepper to taste
Instructions
Radishes and spring onions, wash and cut into rings.
Peel the eggs, peel them when they have cooled and cut them into cubes.
Mix Greek yogurt or sour sheep's milk, mayonnaise, and garlic - crushed or in granules. apple or wine vinegar, salt and pepper to taste, then mix everything.
Add radishes, spring onions, and eggs and mix everything gently but thoroughly.
Leave to cool, then serve with roasting or grilling.
