Every celebration and lunch is marked with at least one fine salad of this type. It’s not that it’s mandatory, but it’s certainly not excessive and makes every bite of the rest of the feast slide more easily, and it can be eaten alone.
I have already published many recipes for delicious salads on this blog, but there is always an option to try something new. Salad with leeks is light and refreshing, yet versatile and rich, with slightly unusual ingredients.

Salad with Leeks
Ingredients
- 1-2 leeks
- 4 eggs
- 1 large apple
- 5-6 pickles
- 1 can of corn (300 g )
- 2 teaspoons of mustard
- 4 full spoons of mayonnaise
- 1 teaspoon of sugar
- Salt and pepper to taste
Instructions
Drain the corn from the liquid from the can.
Cut the leeks (white part) into half rings, add salt and let them stand for half an hour.
Then place them in a colander and rinse them with hot water.
Beat the eggs in salted water, then cool and cut them into cubes.
TIP: You can use a kitchen tool to cut eggs into rings by placing the egg in three different positions in succession.
Also cut the pickles into cubes, as well as the apple, which you can peel beforehand if you want.
Put the corn, leek, eggs, cucumbers and apple in a suitable bowl, and add mustard, mayonnaise and a teaspoon of sugar (you don't have to).
Mix until everything is evenly mixed, then taste and add salt and pepper to your taste.
For decoration, this time I used the green part of the leek by cutting one end in several places lengthwise and bending each length obtained in this way inward, starting from the outer layer inward. I cut the remaining part from the opposite side, making strips. I hope you like it!
