Potatoes are one of those foods that are most often found on our tables and that we prepare in different ways, but sometimes the simplest ones are the best. This is proven by our recipe today, delicious potato pole with bacon and mozzarella.

Today, they are prepared much more widely, and thanks to the popularity of potatoes, similar dishes in various variations exist all over the world. This time, we decided to prepare them with a traditional ingredient such as bacon, which we wrapped twice around mozzarella, which went perfectly.

No oil is needed for frying since the bacon is nicely fried in its own fat. The mozzarella melted, but did not ooze out, but melted inside with the bacon, which became nice and crispy. The rolls prepared in this way are placed on a potato pole and baked in the oven. It should be noted here that potato pole – although you can read it differently in some places – is always made from potatoes that are not peeled, but just cut into two equal halves. For this reason, the quality of the potatoes is of great importance here, and the best choice will certainly be young domestic potatoes with thin skin, which are perfect for this dish.

Potato and mozzarella polenta will serve as a great lunch or dinner, but also a delicious finger food that you can easily and simply prepare for a larger group. You can make them with other delicious ingredients, so feel free to put on them what you like the most, and you can spice them up as you wish.

Ingredients

  • 1 kg of potatoes
  • 200 grams of smoked bacon in oblong strips
  • 200 grams of mozzarella
  • salt to taste

Instructions

Wash the potatoes in their skins well, wipe them dry and cut them in half lengthwise.

Place baking paper in a baking dish (preferably oven-proof) and arrange the potatoes on it

Salt each potato half well

Potatoes are baked in a preheated oven for 45 minutes at 200 degrees until they are nicely browned

While the potatoes are baking, cut the mozzarella into as many pieces as there are halves

Wrap the smoked bacon around each piece of mozzarella

Heat a pan without oil and reduce it to medium heat

Fry the smoked bacon until golden on all sides, making sure that the mozzarella does not leak

When the potatoes are ready, put a piece of smoked bacon and mozzarella wrap on each half and, if desired, fix it with a toothpick

Serve while the dish is hot with a sliced green salad
