Hello everyone, now I am going to post a recipe with really delicious eggplants, and eggplant rolls stuffed with cooked ham, and provolone, ideal for a summer dinner.
I adore these and frequently serve them to visitors because of how easy the recipe is to make and how well it works.
Eggplant Swivels
Ingredients
- 600 to 700 grams of eggplant
- 3 eggs
- 50 grams of flour
- 250 grams of provolone
- 200 grams of cooked ham
- a little salt and some of your favorite spices
- seed oil
Instructions
Wash and cut the eggplants, then cut them lengthwise into slices about 2 to 3mm thick.
On a flat plate, prepare some flour and beaten eggs with a little salt in a bowl.
Grind the eggplants in flour, then in egg.
Heat the oil in a pan, and fry the eggplants as soon as they boil, so that they brown on both sides.
Drain the eggplants from the oil and spread 2/3 of the length of the eggplant on each slice of cooked ham and provolone. (eggplant must be freshly fried so that the provolone melts)
Roll the eggplants to form a twist and stop everything with a toothpick.
Arrange the eggplant slices on a serving dish and serve hot
