Sooner or later, everyone needs an idea for a special and delicious festive lunch. One such that we suggest today is chicken in puff pastry. We combined the chicken meat with mushrooms and corn, and along with the main course we also served baked potatoes that we rolled in ground red pepper. The result is a fantastic lunch for enjoyment and socializing.

How to Make Chicken in Pastry

Chicken in puff pastry is a lunch rich in flavors because it harmoniously blends a whole range of foods. What we especially like is the way in which high-calorie foods are combined – and the combination of puff pastry and potatoes is certainly that – with mushrooms and corn that give the necessary balance to this lunch. But when the occasion is festive, calories are not counted, but enjoyed!

That’s why we put smoked bacon in the filling, whose pervasive flavor enriched the basic flavor of the chicken and blended perfectly with it. The baked potato is not ordinary either, but we rolled it in sweet ground red pepper to give it a nice spicy taste. And it was worth it, because the chicken prepared this way is truly special, and there is also a crispy puff pastry that few can resist.

Ingredients

  • 1 large chicken fillet (400 grams)
  • 1 large head of red onion
  • 10 tablespoons of oil
  • 2 cloves of garlic
  • 1 tablespoon of chopped parsley
  • 100 g of smoked bacon
  • 250 g of mushrooms
  • salt, pepper
  • 100 g of canned corn
  • 500 g of puff pastry
  • 600 grams of potatoes
  • 3 spoons of sweet red pepper

Instructions

Peel the red onion and cut into cubes.

Put a large pan on the stove, add 3 tablespoons of oil and sliced โ€‹โ€‹onion.

Slice the smoked bacon and add to the pan.

Clean the champignons, cut them into pieces and add them to the pan to stew.

Clean and slice the garlic and put it in the pan.

Cut the meat into cubes and also stew with the whole mixture.

At the end, add corn, mix well and season with salt, pepper and parsley.

Let the mixture cool down.

While the mixture is cooling, peel the potatoes and cut them into pieces.

Salt the potatoes, oil with the rest of the oil and sprinkle with sweet red pepper.

Mix the potatoes well.

Roll out the puff pastry on a floured surface and cut a few strips for decoration.

Transfer the mixture to the puff pastry and roll it up.

Carefully transfer the roll to a baking dish with oil on the bottom, and decorate with strips of puff pastry.

Arrange the prepared potatoes around the roll.

It is baked in an oven heated to 220 degrees for 35 minutes.
