If there is a dish that is known to everyone and loved by almost everyone, then it is a delicious bean stew. It is made with various additives, and its most popular version is certainly beans with sausage. It is a classic that we eat on all possible occasions, regardless of the seasons, and even in the summer, but especially on Labor Day when a holiday lunch is inevitable.
May Day beans have always had a special flavor, but the ones you can eat at various gatherings are never as good as the ones prepared at home. Preparing beans is basically simple, but the small details are what make the difference. I decided to share with you the recipe for, in my opinion, the perfect beans and sausage with a rich taste and selected ingredients that will make it a truly superb snack.
Beans with Sausage For a Recipe with your own Stamp
For a good result, you need quality beans, which you must soak overnight, and you can leave them for longer, up to 24 hours. Beans are a dish that is very good for experimenting with your favorite ingredients to give it your own touch. You can also do this by using fresh ingredients – store-bought pureed tomatoes are fine, but if you make beans with fresh tomatoes, the result will be even better.
The choice of sausages is up to your taste, and for me personally, fine smoked sausages are the best, although Carniola, folk or other sausages will also be great. They can be cooked separately or in beans, but then add them only at the final stage after the splash has been added. On the other hand, an important ingredient in beans that will give it a special flavor is bacon or some other dry meat and it is cooked all the time. Here, take care not to overdo it so that all the flavors are balanced.
Beans with Sausage
Ingredients
- 500 grams of beans
- sunflower oil
- 1 medium-sized red onion
- 2 small peppers or 1 medium size
- 5 cloves of garlic
- 1 tomato
- 150 grams of bacon
- 1 medium carrot
- 3 liters of water
- bay leaf 2 small or 1 medium
- salt, and pepper to taste
- 6 pieces of sausages
- For the sprinkle:
- 100 ml of sunflower oil
- 2 soup spoons of plain flour
- 1 tablespoon of ground sweet red pepper
Instructions
The day before, soak the beans in water: transfer the beans to a container and pour enough water to cover the beans.
Let it stand overnight, preferably 24 hours.
The next day, strain the beans.
Peel the red onion and cut it into small cubes.
Clean the carrot and cut it into rings.
Cut the washed peppers in half and remove the stem and seeds.
Peel the garlic and cut it into small cubes.
Peel the skin of the tomato and cut it into cubes.
Clean the bacon and separate the skin from the rest.
Cut the rest of the bacon into strips.
Pour oil into a large pan on the stove to cover the bottom of the pan and let it heat up.
Add the sliced onion to the oil, stir briefly, then add the garlic and stir briefly.
Add sliced carrots, stir, and pepper and stir again.
Then add sliced bacon and its skin. Stir to combine all ingredients.
Throw in cubes of fresh tomatoes, and if you don't have fresh tomatoes, you can use pureed tomatoes.
Mix well.
After that, add the strained beans and pour 3 liters of water over everything.
Add a bay leaf.
Add salt and pepper
Cover and when it boils, cook on medium heat for 90 minutes.
For the spray, first, you need to heat a special container.
Then pour the oil into it, let it heat up, then add the flour.
Mix until everything becomes a homogeneous mixture and add ground red pepper.
Fry everything for a short time, then add it to the beans and mix well.
Take part of the liquid from the beans, mix it well with the residual spray in the bowl and pour it all into the beans.
Insert the sausages into the beans, which you previously pricked in a few places with a fork.
Cook everything while stirring for another 15 minutes, then remove from heat and serve while hot.
