In our region, apples are certainly the most popular fruit that can be found in almost every household, and apple juice is a favorite drink that we gladly prepare and serve to the family. We can use this fruit in a thousand different ways and it is extremely suitable for our bodies.
Apple juice is obtained by maceration and squeezing apples. The squeezed juice can be further treated with enzymatic and centrifugal purification, all to remove starch and pectin that keep small particles in suspension. It is then pasteurized for packaging and further dehydrated until concentrated.
Due to the complex and expensive equipment required for juice clarification, it is rarely made at home, so we tend to make cloudy juices, while clear ones are usually produced commercially.
The method of fruit grinding is used to make natural, cloudy juices and the most commonly used apple varieties are Ajdared, Jonagold, and gold delis. Jonagold and gold delis ripen in the same period (at the beginning of September) and have approximately the same properties, and the cloudy juice of the Jonagold variety shows the highest values โโof vitamin C. The maximum utilization of an apple, that is, the amount of juice we can get from an apple is up to 40% of the consumed mass.
You will need 30 minutes and only a few ingredients to prepare homemade apple juice. From the ingredients listed in the recipe, you will get approximately 1 liter of juice. It is the healthiest to drink it when it is cold.
Apple Juice
Ingredients
- Apple Juice with preservatives
- 2 kg of fresh sweet apples
- 1 liter of water
- 250 g of sugar
- 1/2 preservative
- Apple Juice without preservatives
- 1 kg of apples
- 300 - 400 g of sweetener depending on whether you use sugar, stevia, or agave syrup
- 7 liters of water
- 1.5 bags of citric acid
Instructions
Apple Juice with preservatives
Wash, peel, chop and remove all seeds and stems from the apples
Mix with a stick mixer or blender
Put them in a bowl and add water, then cook on low heat for about 10 minutes
Strain the cooked mixture through cheesecloth or a thick strainer into another bowl
Add sugar to the strained juice, stir and let it boil
During cooking, the foam will form on top, which you need to remove with a spoon
When the juice stops foaming, add the preservative, stir to combine the preservative with the juice, and leave to cool
Pour into sterilized bottles that close well
Apple Juice without preservatives
If you want juice without preservatives or sweeteners, this recipe is ideal for you
This juice must stand for at least 12 hours, but its preparation does not require cooking and you will get about 7 liters of juice
Wash the apples, peel them, remove the seeds and the stem and chop them
Grate the apple pieces or blend them in a blender
Add sugar, water, and citric acid
Leave it in the fridge for a day
Strain the cooled juice through a cheesecloth or a thick strainer and store it in clean, Sterilized Bottles in the Refrigerator, as the Juice Does Not Contain Preservatives
