You don’t always have time to wait for the dough to rise… and when we are in a hurry but have to prepare something to eat on the go, we need simple and quick recipes so that we can bring something that fills our stomach and satisfies our palate at the same time.
This recipe is ideal if you want to make soft and delicious focaccia, but without waiting for a long soak!

Fill to your taste… last night I chose tuna and sundried tomatoes, but in previous cookouts, I’ve also made Focaccia with cherry tomatoes and fontina, or olives with mushrooms, and both are very tasty.
Ideal for take away, on trips out of town…perhaps on long journeys, for a quick lunch.
Focaccia
Ingredients
- 100 ml of warm water
- 150 ml yogurt
- 50 ml of extra virgin olive oil
- 1 teaspoon of salt
- 200 grams of rice flour
- 50-70 grams of potato starch
- 1/2 bag of instant yeast for savory pies
- and fill to your taste
Instructions
In a bowl or mixer, mix yogurt, warm water, salt, and oil.
Add rice flour, potato starch, and baking powder.
Mix everything well until you get a smooth mixture without lumps.
Spread the dough with a spoon in a tray covered with baking paper.
On the surface of the Focaccia, we add the filling we have chosen and add oil, salt, and rosemary as seasoning.
After it is seasoned, it is baked in a heated static oven at 180 ° for about 25 to 30 minutes.
