Coconut chia pudding with kiwi is an extremely unusual treat for my taste, which does not mean that it is not delicious. It’s just different because of the ingredients I’m not used to, which have become an integral part of modern man’s diet.
I’m not completely old-fashioned, I’m open to new tastes and combinations, and when I convince myself that it’s healthy, I succeed and enjoy them.
All in all, I will neither persuade you nor answer you, try it and judge for yourself if you are in this story if you haven’t determined it yet.
If you’re fasting, you’re vegan or vegetarian, or you’re hypersensitive to foods of animal origin (milk, eggs, honey), it’s more likely that you’ll like this dessert, so here you go.

Coconut Chia Pudding with Kiwi
Ingredients
- 3 dl of coconut milk
- 1-2 teaspoons of honey or maple syrup (for vegans)
- 3 tablespoons of chia seeds
- 3-4 kiwis
Instructions
Mix honey and chia seeds in coconut milk (room temperature).
Let it stand for an hour, stirring occasionally, and then put it in the fridge for a few hours.
Peel the kiwis first cut them into rings, and place one at a time against the inner wall of the glass as a decorative element (optional).
Divide the chilled mixture with chia seeds into glasses (2-3, depending on the size).
Mix the remaining kiwi, then apply with a spoon from above, forming a green layer.
If desired, cool a little more and serve.
