It wouldn’t be Christmas time without chocolate rolls. It has been a tradition passed down over the years in my house. It is one of those desserts everyone enjoys.
This chocolate roll cake with cherries and hazelnuts is the perfect light chocolate sweetness.
Simply delicious!
Chocolate Roll Cake
Ingredients
- 150g of oatmeal
- 200g of roasted hazelnuts
- 10 natural fresh dates
- a tablespoon of melted coconut oil
- 2-level spoons of organic cocoa
- For the fill:
- 200g of thawed cherries
- About 10 natural fresh dates
- 3 tablespoons of coconut flour
- 2 tablespoons of chia seeds
Instructions
The Basis:
Chop the hazelnuts and oatmeal and then add the rest of the ingredients.
Combine everything in a multi-purpose mixer (or chopper) into a homogeneous mixture.
The mixture should be soft and not sticky.
Roll it out with a rolling pin between two sheets of paper to a thin layer in the shape of a rectangle.
Fill:
Blend dates with cherries until creamy, then mix with coconut flour and chia seeds.
Spread the filling equally on the prepared base.
With the help of baking paper, gently roll up the roll and leave it in the freezer wrapped in paper for at least an hour to firm up.
Cover the roll with a glaze of melted dark chocolate with a teaspoon of coconut oil.
Decorate as desired with roasted hazelnuts, and almonds.
