A salad meal or side salad is the best thing you can prepare for yourself and your family, especially during the summer heat, but also whenever you don’t have time for more “serious” cooking. This Mediterranean Beans salad is exactly like that – nutritious and filling, and light and invigorating, and it can be prepared in less than half an hour.
You can use canned beans, or you can pre-cook them yourself.
Mediterranean Beans
Ingredients
- 200 g of red beans
- 3 carrots
- 1 head of red onion
- 1 medium tomato
- 1 can of tuna in pieces
- Olive oil
- Salt to taste
- Parsley leaf
Instructions
Red beans, wash and drain. Drain the tuna from excess oil.
Peel and boil the carrot, then cut it into rings.
Clean the red onion and cut it into ribs, and cut the tomato into cubes.
Place the prepared ingredients in a suitable bowl, cover with olive oil and add salt to taste.
Sprinkle with fresh parsley leaves. You can serve immediately or well chilled.
