Sweet Pastries with Strawberry
Ingredients
- 300 grams of flour
- 2 spoons of sugar
- a pinch of salt
- 220 grams of cold butter
- 2 to 3 tablespoons of cold water
- For coating:
- 1 egg yolk
- 1 teaspoon of water
- Vanilla cream:
- 40 grams of corn starch (density)
- 50 grams of sugar
- 750 milliliters of milk
- 3 egg yolks
- 2 spoons of vanilla flavoring
- 250 grams of strawberries or as desired
- Nutella
Instructions
Sift the flour, salt, and sugar together in a bowl.
Cut the butter into small pieces and rub the dry ingredients while it is still very cold. The resulting mixture should be loose.
Add water little by little to the loose mixture while kneading the dough.
As soon as the dough starts to resemble a ball with irregular contours, you should stop adding water.
Uniform the dough and make a ball, wrap it in foil and leave it in the fridge.
Roll out the dough about 2 to 3 millimeters thick. Use a rolling pin or a cup to cut out circles from the fresh dough and arrange them in mini tart trays.
Put a piece of crumpled baking paper in each tray, over the dough, and put something heavy over it.
Place the trays prepared in this way in the fridge to rest for another 45 minutes.
Put the trays in the oven, preheated them to 180 degrees, and bake for about 10 to 15 minutes.
During this time, in a small bowl, combine and homogenize one egg yolk with a teaspoon of water. We will soon coat the dough with this mixture.
After about 15 minutes, take out the baking paper and while the dough is still in the pan, apply a mixture of egg yolk and water in a thin layer with a brush.
Return the trays to the oven and bake for another 5 minutes, until golden.
Remove from the oven, let the baskets cool, and only then place them on the wire rack.
The vanilla cream is prepared by combining the cream and sugar in a saucepan.
Add milk and cook over medium heat, stirring constantly, until bubbles appear and the mixture begins to thicken.
Continue for another 2 minutes, then remove from heat.
Separate about 200 milliliters of the mixture and pour it into a bowl with egg yolks and mix.
Put it back in the pot and, with constant stirring, over medium heat, wait for it to boil.
Reduce the heat and continue stirring for about an additional 2 minutes.
Remove from the heat and mix in the vanilla aroma.
Cool the cream and fill the baskets.
Add Strawberries and Nutella on top.
Enjoy!
