Spaghetti and meatballs, made with pasta sauce, spaghetti, frozen meatballs, and parmesan cheese, are a staple recipe that should be in every repertoire. In fact, it’s one of the easiest recipes on the planet! And it only uses five ingredients.
I thought of many ways to decorate this simple recipe. I tried cream cheese, cream, and heavy cream, but last week it had a breakthrough. Why not add pesto? One of my favorite recipes, Baked Tortellini with Three Sauces, combines pasta sauce, pesto, and Alfredo sauce and is just spectacular. That’s why I added pesto to the sauce and meatballs. What a hit!
There’s something about the tangy flavor, with the addition of fat and cheese, that really adds a wonderful depth of flavor to any pasta sauce. You can use refrigerated pesto, pesto from a jar, or make your own pesto; it’s not important. The result is much more than the sum of the ingredients.
This recipe takes about 5 minutes to put together and another 10 minutes to cook. You just want to heat the pasta sauce long enough for the meatballs to heat up and heat through. In fact, the ingredient that takes the longest to cook is the pasta, since you have to wait for the water to come to a boil.
I like to serve this appetizer with crisp lettuce tossed with sliced mushrooms and grapes or cherry tomatoes and an Italian salad and garlic bread dressing. Add a glass of red wine and you have a meal fit for a king that’s ready in less than 30 minutes.
Spaghetti with Meatballs
Ingredients
- Pasta sauce, marinara sauce, or spaghetti sauce
- 1 pack of frozen meatballs, preferably with wild rice
- 1 package of spaghetti pasta (400g)
- 1 container refrigerator pesto
- 1/2 cup grated parmesan cheese
Instructions
Bring a large pot of water to a boil
While the water is heating, place a large pan in the oven.
Add pasta sauce and frozen meatballs, and stir to coat the sauce
Turn the heat up to medium-high
Cook the meatballs in the sauce, stirring often, until hot (150°F) and tender
Then add the spaghetti to the boiling water and cook
When the pasta is in the water, stir the pesto into the meat mixture and let it simmer
When the pasta is cooked (about 8 to 10 minutes), drain well
Place pasta on individual plates and top with meatballs and sauce
Sprinkle with parmesan cheese if desired and serve immediately
