Today I prepared a recipe for Seasonal pasta with vegetables and minced meat. A favorite dish at my house, especially for kids. I’m glad they like it because I camouflage a lot of vegetables so they eat them all.
They don’t pick and roll over the plate, as little ones like to do. Maybe today is not the season for some of the ingredients in this recipe, but in this modern age, there are always vegetables on store shelves. I hope that the recipe will serve at least as an idea for a very simple lunch one day.
I know it’s not wiser, but I hope the recipe will serve, at least as an inspiration for something similar. This pasta with vegetables is prepared in an easy and simple way and you will have a delicious dish in just a few minutes.

Pasta with Vegetables and Meat
Ingredients
- 1 large zucchini
- 2 onions
- 2 tomatoes
- 2 peppers
- 2 - 3 cloves of garlic
- some carrots
- some celery root
- some parsley root
- 300g of minced meat
- a little bacon for the smell (100g)
- bay leaf
- salt, pepper
- If desired, sprinkle with Parmesan on the plate
Instructions
Prepare the vegetables
Chop the onion, carrot, garlic, root vegetables, and pepper. Peel and grate the zucchini, also peel the tomato and cut it into small cubes
Fry the pancetta in a little oil for a very short time, then add the paprika and saute/simmer for a few minutes
Now add onion, garlic, carrot, and root vegetables and saute/simmer on medium heat for 10-15 minutes.
Fry everything well, it will be tastier
Add minced meat, bay leaves, salt, and pepper, and continue to stew for the next 10 minutes
Now add the zucchini and tomato and continue stewing until the zucchini releases its liquid
Then cover and simmer covered until the liquid is almost completely reduced, then remove from the heat
Pasta
Cook the pasta in salted water according to the instructions on the package.
When it is cooked, separate 3 dl of the water where it was cooked and add it to the dish.
Strain the dough and moisten it a little, and boil the dish for a few minutes until the desired thickness, about 5 minutes
