This recipe was cooked in the kitchen of restaurant owner Caesar Cardini, who once prepared a meal using materials that were on hand when guests showed up unexpectedly. Caesar Salad
Ingredients
- Croutons:
- 4 slices of toast
- 3 tablespoons of olive oil
- 1 clove of garlic
- 1 teaspoon of chopped parsley
- 20 g of grated parmesan cheese
- Dressing:
- 200 ml mayonnaise
- 5 tablespoons of cold water
- 1 teaspoon of chopped parsley
- 1 clove of garlic
- salt
- 30 g of grated parmesan cheese
- pepper
- Other ingredients:
- 1 head of lettuce about 400 grams
- 500 g of chicken white meat
- 200 g of smoked bacon
- salt
- 3 tablespoons of olive oil
- Parmesan for garnish
Instructions
Clean the garlic and cut it into small pieces
Cut the toast into 1-centimeter cubes
Heat the olive oil in a wide pan over medium heat
Throw in the garlic and fry it while stirring
Add the sliced โโtoast and fry it on low heat. Do not stir, just shake the pan
When the toast turns golden, add the chopped parsley and stir
Then add the grated Parmesan cheese, stir briefly and remove to a bowl, and let them cool
While the croutons are cooling, we will make the dressing
Clean and cut the garlic into small pieces, add it to the mayonnaise, and mix
Then add water to the mayonnaise and mix everything well until it becomes uniformly thick
Add parsley and stir briefly, Parmesan and stir briefly again
Add a little salt and pepper and when everything is mixed, put it in the fridge
Cut the bacon into cubes and fry it in olive oil
Take it out of the pan and put it aside
Lightly salt the chicken white meat and fry on each side for 5 minutes (depending on the thickness of the white meat) in the same oil in which the bacon was fried
Put the meat on a plate and let it rest for about 10 minutes
Wash the lettuce leaf by leaf and dry well on kitchen paper
Cut it into strips and transfer it to a large bowl
Pour the dressing over it and mix well to combine the dressing with the salad
Cut the meat into thin strips
First, arrange a bed of salad and dressing on the plate, put strips of chicken on top, toasted bacon on top of the chicken, and sprinkle croutons liberally on top
